mango chicken [ 05.25.03, 12:10 a.m. ]

this is a recipie for an awesome chicken dish:

ingredients

3 whole chicken breasts, no skin

poaching liquid*

2 mangoes peeled, pitted and cut into bit-sized pieces

1/2 tsp curry powder

1/4 tsp ground cumin

1 c. corsely chopped toasted cashews

2 tsp chopped cilantro

1/3 c sour cream

1/3 c. mayo

*poaching liquid:

4c. chicken stock

1 celery leaf

1 parsley sprig

pinch of salt

1 tbsp lemon juice

i'm hoping you read through entire recepies first before setting up ingredients, etc. because, i will now add my changes as i go along with the directions.

directions

poach your chicken breasts (cut after cooking, less mess and possible cross-contamination) in the poaching liquid for about 10-15 mins, until no longer pink. i added a teaspoon of chopped garlic, chives and a dash or two of black pepper. i did not add the pinch of salt as per directions because the chicken broth i use is generally salty enough. i also added my cilantro at this stage so the flavour would be lighter..because cilantro for me is quite a large taste.

while chicken is cooking, peel and cut mango. drain chicken from broth and place in a serving dish. add mango.

mix sour cream, mayo (i use miracle whip), cumin and curry, pour onto chicken and mango.

i chose not to use the cashews because i do not like cashews. i might try almonds, but i sprinkled flax seed and that tasted rather nice.

chill the dish for 20-30 mins.

yum. serve with brown rice, your tastebuds (and other bodily parts) will thank you.
